PUMPKIN RELISH. FRESH AND DELISH AND EASY!
The harvest season is here and apples, pears and pumpkins are “in season”. It is so very easy to purchase a bundle, but what to do when they begin to feel too soft to eat?
Why, turn it into a relish!
Relish is delicious with everything, from meat to ice cream to the stuffing of baked apples, our pumpkin relish is seasonable delightful!
Pumpkin Relish, easy, fast and delish! Peel, chop, simmer and enjoy as your new relish compote. As a side to roasted turkey, on top of ice cream, or within a cored apple and then baked. You will delight in this spiced addition. Think of it! The day after the holiday, use it as a relish in your traditional turkey sandwich. Tired of turkey? Use this as a compote for your roasted pork. So versatile and so fresh with flavor. Try it! We know it will become a new feasting tradition.
INGREDIENTS
Sugar Pumpkin – small cubes – 1 cup (May substitute with butternut squash)
If you’d like, roast your pumpkin or butternut with rosemary and olive oil, 45 minutes, then place in the saucepan.
2 apples – peeled, small cubes
2 pears – peeled, small cubes
3/4 cup raw sugar
1/4 cup brown sugar
1 tsp cinnamon
½ tsp nutmeg
½ tsp ginger
¼ tsp allspice
dollop of butter
2 TBL of water
INSTRUCTIONS
Place all ingredients in a saucepan and place on a very low heat, let simmer. The longer it steeps, the more hearty it becomes.
SERVE
Serve it alone, serve it with pork, serve it with ice cream, or core an apple, fill, bake and then serve…just serve it!
