Zesty Lemon/Orange Juicy Loaf

2 tbs pea flour, mixed with 4 tbs water

2 tbs extra virgin olive oil

2 tbs grated lemon rind

2 tbs grated orange rind

1 cup ground almond

1¾ cup flour

½ cup almond milk

1 tsp baking powder

2 tbs poppy seeds (optional)



¼ cup lemon juice ½ cup orange juice

Preheat the oven, to 180ºC

and grease (with olive oil) or line a loaf tin. Mix the pea flour mixture and the olive oil, (if you need to rinse the grater, to get all the rind, you can do it over the bowl and use this water, in pea flour mixture).

And/or then add the lemon rind, almond and mix, making a thick/smooth texture.

Fold in the flour, baking powder, seeds, a pinch salt and milk, until all ingredients are combined.

Pour ingredients, into the loaf tin and bake for 45 – 55 mins or until cooked.

Mix together the Syrup ingredients. Pour over the loaf, as soon as it is removed from the oven.

Cool in the tin.
