My mother is an elder, and I, a baby boomer , I wanted to treat her to a perfect and easy afternoon tea. Life is different now that she is older and doesn’t get around as she used to . Yet she still wants to do things, enjoy life and have company over every once in a while.
What a perfect and easy afternoon tea with mum will be when I have the tea steeping at her house, and premake the cucumber sandwiches and meringue cookies at mine, having them prepared at mine.

LADY GRAY TEA

White bread
cucumber
jack cheese
butter or mayonnaise
Prepare the bread with the butter or mayonnaise, most prefer mayonnaise. Place the cucumber slices, then the cheese slices and put the bread together like a sandwich, then trim the crust. Cut the sandwich in triangles. Place a doily on the plate, then place the triangles on the plate.
MERINGUE COOKIES
INGREDIENTS
• 4 egg whites, at room temperature
• 1/2 tsp cream of tartar McCormick® Cream of Tartar
• 1 cup sugar
• 1 tsp Vanilla extract
• 1/8 tsp lemon juice
• 25 to 30 drops food coloring
Place egg whites in blender, add sugar – blend. Add vanilla, tartar, lemon juice – blend. Add food coloring. Blend at a higher speed until egg whites are peaked. Place in piping bag. Squeeze onto parchment paper or buttered foil-lined tray.
Bake 225 for 40 minutes; let cool for about an hour. Serve.
