HOLIDAY PLUM CAKE! WITH CRUMBLE AND COULIS
Plum Cake With Crumble & Coulis
200 mls extra virgin olive oil
3⁄4 cup ground almond
3 tbs pea flour, mixed with 6 tbs water
21⁄4 cups flour
1 tsp baking powder
8 fresh sml plums
2 green apples
Mix the olive oil and almond together, and slowly add, the pea flour mix. Sift flour and baking
powder into the mixture, then mix lightly. Cut plums in half and remove stones, then cut them
into pieces. Peel apples and grate.
Add to cake mixture and mix well. Spread mixture, into a ring tin (greased with olive oil).
Sprinkle with the Almond Crumble. Bake at 180oC, for 45 mins.
Cool in tin for 10 mins, then turn out cake onto a rack, covered in baking paper or use a plate.
Turn over again, onto a cake rack. Can serve warm, as a dessert with Plum Coulis. Otherwise
pour the Plum Coulis, over the top and leave to cool.
Almond Crumble
70 gms ground almonds
1⁄3 cup cinnamon
1⁄4 cup flour
2 tbs extra virgin olive oil
Place dry ingredients into bowl and then add olive oil, to form a crumble.
Plum Coulis
6 – 8 sml fresh plums
1⁄4 cup water
Wash plums and remove stones. Place plums, sugar and water in a saucepan, slowly bring to
the boil and simmer, until plum flesh is soft. Push the juice and flesh through a sieve,
discarding the skin. There you have, the Plum Coulis!
