REMEMBERING AND MAKING THE PERFECT DEVILED EGGS

What to do with those leftover hardboiled eggs!

‘Tis the season of the perfect deviled eggs, of that there is no doubt.  Yet, does anyone really eat your deviled eggs?  We have a classic, perfect deviled egg recipe guaranteed to be devoured from your smallest party-goer to your largest party-goer!  Finally!  The perfect Deviled Egg recipe for all ages!

Let’s get started

Depending upon your crowd size and your patience for coloring, then demolishing, figure about 1 ½ eggs per person.

INGREDIENTS

Eggs
celery 1 stock – diced
tsp purple onion – diced
sweet pickle relish (TBL more or less)
TBL mayonnaise
tsp dry mustard

Garnish
celery leafettes
paprika

RECIPE based upon 8 eggs

HARD BOIL THE EGGS
place the eggs in the cold water, water to cover the eggs;
bring to a boil for 15 minutes;
leave in boiled water for 20 minutes;
rinse under cold water to allow for egg membrane to easily separate from shell.

CUT THE EGGS LENGTHWISE
remove the yolk and place in a small mixing bowl;
lay them in a decorative plate, on top of a bed red leaf lettuce is always festive!

MIX TOGETHER
smash the yolks;
add:  Mayonnaise, Dry Mustard, Sweet Pickle Relish, Purple Onion and Celery – mash into yolks;
you may need to add mayonnaise, to achieve desired consistency.

PLACE INTO EGG HALVES
spoon into egg halves
DECORATE
place a small single celery leafette atop each egg half;
sprinkle very lightly and quickly  the Paprika atop the entire plate.

SERVE!!

If you have wee little ones, you may want to omit the onion, or lessen amount.

You will be pleasantly surprised how your guests will devour your deviled eggs.  It’s our experience that this might well become your signature dish!
