Let’s make a healthy yam casserole. This fast, easy, healthy yam casserole is a guaranteed looker and incredibly delicious side dish! Yam casserole has a bad reputation. It’s looked at as decadent, too sweet, too sugared, too unhealthful… but the truth of the matter is, yam casserole is one of the healthiest and better tasting holiday-remembered side dishes. It simply must be cooked with natural ingredients, meaning no white bleached sugar or marshmallows or massive amounts of butter.

The sweetness of the yam casserole is derived from the roasted yams/sweet potatoes and the pineapple.
Not sure how to properly sweeten without sugar? Here’s how. When you purchase your pineapple, and it’s a little golden, keep it on the counter until it becomes completely golden, then it’s ready to cut into!
Peal the yams or sweet potatoes;
Then slice into ¼’ -1/8th” rounds;
Lay in parchment-laiden baking dish;
Pour 1/8 cup of orange juice over rounds.
Top with ripe pineapple rounds if desired;
Sprinkle with cinnamon and cloves;
Top with pecans.
Bake 350, for 50 minutes.
